Creamy White Chocolate Eggnog
This traditional creamy drink with a twist of white chocolate is a great way to warm the soul over the mid-winter festive season and is the perfect novelty for social gatherings with family and friends.
Ingredients:
- 3 cups of milk (nutmilk suitable dairy-free option),
- 4 egg yolks,
- 1/3 cup maple syrup or liquid honey,
- 100 grams of finely chopped white chocolate,
- 3 tbsp rum,
- 3 tbsp brandy,
- 1 tsp of nutmeg,
- Pinch of cinnamon to sprinkle.
Directions:
Step 1: Pour milk into saucepan and bring to boil. Once boiled remove from heat.
Step 2: Add egg yolks and maple syrup in a medium size bowl and whisk until combined. Gradually stir in hot milk.
Step 3: Return eggnog mixture to the saucepan. Whisk regularly over a low heat (without boiling) until the mixture is thick enough to coat the back of a spoon. Remove from heat.
Step 4: Add white chocolate, rum, brandy and nutmeg to mixture; stir until smooth.
Step 5: Pour eggnog into glasses (makes 4) and sprinkle with a pinch of cinnamon.
Want an alcohol free version? Simply leave out the alcohol.
